Serves-2 Ingredients- • 100 g rice noodles • 200 g firm tofu (cubed) • 1 tbsp oil • 2 garlic cloves, chopped • ½ onion, sliced • 1 carrot, julienned • 1 cup bell peppers • 1 cup bean sprouts • Spring onions, peanuts (10 g), lime wedges Sauce- • 2 tbsp tamarind paste • 1 ½ tbsp soy sauce • 1 tsp brown sugar • ½ tsp chili flakes Method- 1. Cook noodles as per packet instructions, drain. Toss in some oil to prevent sticking. 2. Press tofu to remove excess water. Crisp tofu in ½ tbsp oil until golden brown, set aside. 3. Mix sauce ingredients in a bowl. 4. Stir-fry garlic + onion in ½ tbsp oil, add carrot, bell peppers, half sprouts. 5. Add noodles + sauce, toss well. Add tofu back. 6.
